Aloo bhujiya with Kadi Patta

Curry leaves (Kadi Patta) are used in many dishes in India, Sri Lanka and neighboring countries. The leaves are fabulous seasoning used in southern and west-coast Indian cooking.
Ingredients
- Potatoes (boiled) – 7-8 medium size
- Curry leaves (chopped) – 7-8
- Small mustard seeds – 2 Teaspoon
- Green chilies (chopped) – 3 to 4
- Turmeric powder – ½ Teaspoon or as per your required
- Lemon juice – ½ tsp or add as per taste
- Chat masala or dried mango powder -1 Teaspoon
- Oil – 3 tbsp
- Rock salt (sendha namak) for taste
Method
Peel the boiled potatoes and cut into cubes.
Heat oil in a pan on medium flame.
Add the small mustard seeds. Wait until it starts to splutter and change colour.
Add the potato cubes, turmeric powder, curry leaves and rock salt and mix it well with the smal musturd seeds.
Saute the potatoes for 6-7 minutes on medium flame.
Cook over medium heat till the potatoes are completely lightly browned.
Add the lemon juice and stir 2-3 minutes.
Add chat masala and mix well.
Turn off the gas and serve hot with Puri.

Aloo sabji with Curry Leaves
Ingredients
- Potatoes boiled - 7-8 medium size
- Curry leaves chopped - 7-8
- Small mustard seeds - 2 Teaspoon
- Green chilies chopped - 3 to 4
- Turmeric powder - ½ Teaspoon or as per your required
- Lemon juice - ½ teaspoon or add as per taste
- Chat masala or dried mango powder -1 Teaspoon
- Oil - 3 tablespoon
- Rock salt sendha namak for taste
Instructions
- Peel the boiled potatoes and cut into cubes.
- Heat oil in a pan on medium flame.
- Add the small mustard seeds.Wait until it starts to splutter and change colour.
- Add the potato cubes, turmeric powder, curry leaves and rock salt and mix it well with the smali mustard seeds.
- Saute the potatoes for 6-7 minutes on medium flame.
- Cook over medium heat till the potatoes are completely lightly browned.
- Add the lemon juice and stir 2-3 minutes.
- Add chat masala and mix well.
- Turn off the gas and serve hot with Puri or Roti.
