Aloo Paratha is North India’s favorite breakfast. This recipe filled with spicy potato stuffing made with spices. It can be served with plain yogurt, pickle, or chutney. Apart from being a tasty dish, aloo ka paratha also provides several health benefits. Good source of carbohydrate, vitamin C, vitamin B6, potassium, and dietary fiber. Vitamin C is an antioxidant that supports immune function, while potassium is important for maintaining proper heart and muscle function.
Ingredients
For Dough:
- Whole wheat flour – 2 cups
- Salt – 1/2 tsp
- Water (or as needed) – 1/2 cup
For Stuffing:
- Aloo – 4-5 medium sized
- Green chili – 5-6(finely chopped) or as per your taste
- Onion – 1 big (finely chopped)
- Kashmiri red chili powder (optional) – 2 teaspoon ( for colour )
- Salt to taste
- Fresh coriander leaves, chopped
- Ghee or oil for cooking
Method
How to make dough and filling for paratha
- In a mixing bowl, combine the flour and salt. Add water gradually to make a smooth dough. Cover the dough and set aside for 15 minutes.
- Chopped onion, green chilies and coriander leaves.
- In a separate bowl, mashed potatoes with salt and coriander leaves.
- Heat ghee in a pan on medium heat and add onion and green chili and sauté until they turn translucent. Add Kashmiri red chili powder (this is totally optional) and mix well, cook at least 2-3 minutes.
- Add mashed potatoes and mix well making sure all the ingredients are well combined. Allow to cook 5 minutes and turn off the gas. Aloo stuffing is ready.
How to make paratha
- After the dough has rested for 15 minutes, knead slightly.
- Divide the dough into equal-sized balls. Take one ball and dust it with some flour. Roll it out into a small circle. Place a spoonful of the aloo mixture in the center of the circle.
- Bring the edges of the dough together to cover the aloo mixture and form a ball. Press down gently with your hands.
- Roll out the ball into a flat disc, about 1/4 inch thick. Heat a tawa or griddle over medium heat. Place the paratha on the hot tawa and cook until small bubbles start to appear on the surface.
- Flip the paratha and brush some oil or ghee on top. Cook for another 1-2 minutes. Flip the paratha again and spread ghee or oil on the other side. Press the edges of the paratha gently with a spatula to ensure it cooks evenly.
- Serve hot with yogurt, pickle, or any chutney of your choice. Enjoy your delicious aloo ka paratha!
