Ingredients
- Wheat flour – 1 cup
- Baby potatoes, boiled and mashed – 20 no.
- Cumin powder – 1 teaspoon
- Red chili powder – 1 teaspoon
- Coriander powder – 1 teaspoon
- Carom (Ajwain) Seed – 1 teaspoon
- Clarified butter (Ghee) – 2 teaspoons
- Salt to taste
- Oil for frying
- Water for kneading
Instructions
- Take a pressure cooker and boil the potatoes in it with 2 cups of water over medium flame. Then, peel and mash the potatoes. Here I am using baby potatoes. You can use big or medium size potato also.
- In a mixing bowl, add wheat flour, potatoes, clarified butter (ghee) and all dry spices (masala). Mix all the ingredients very well. Add water accordingly (aloo will release the moisture, so add water accordingly) and start knead it into a smooth and tight dough. Cover the dough and keep aside for 15 to 20 minutes to set.
- Divide the dough into small pieces but equal portions. Roll them into small circles but thin medium thickness.
- Heat refined oil in a deep frying pan wok or kadai on medium heat. Once hot than add one puri at a time and fry gently pressing down with the frying spoon in a circular motion. Turn and cook other side for another minute till light golden brown. Remove it from the oil and place on paper towel. Repeat the frying process with the remaining dough balls.
- Serve the hot and crispy aloo ki puris with your favorite chutney, pickle, or curry.
