Ingredients
- Flat beans (sem) – 100 grams
- Potatoes (aloo) – 2 (small sized)
- Onion – 1 (small)
- 1 tomato, chopped
- Green chilies – 2
- Garlic – 6 cloves
- Ginger – 1/2 inch
- Tomato – 1 (small)
- Fenugreek (methi) leaves – A handful
- Phoran – 1/4th teaspoon (Mustard seeds, saunf, cumin seeds & onion seeds)
- Turmeric powder – 1/4 teaspoon
- Red chili powder (adjust to taste) – 1 teaspoon
- Salt to taste
- 2 tablespoons oil
Method
- Peel the potatoes. Wash and cut the potatoes into small cubes . Keep them aside. Now take flat beans and snapping the tops off with your fingers and cut into small cubes.
- Add chopped onions, ginger, garlic and green chilies. Add the blender or food processor, blend to a smooth paste. Keep them aside
- Heat oil in a pan over medium heat. Add phoran and allow them to splutter.
- Add cubed potato and methi leaves. Mix it well. After 2 minutes add flat beans and mix everything together. Cover the pan with a lid and cook on low to medium heat.
- Cook covered for about 10-15 minutes on low flame till the veggies are cooked. Now add turmeric powder, salt and red chili powder and stir.
- After 2-3 minutes add onion – garlic paste and stir. Add chopped tomatoes and cook until they become soft and the oil starts to separate. Now this stage add 1/2 cup water. Bring to a boil and then reduce the heat to a simmer until light thick gravy.
- Now aloo sem ki sabji is ready to serve. Enjoy with plain boiled rice.
