Bhandare wale aloo ki sabji is a famous North Indian potato recipe, also known as vrat wale aloo ki sabji. This curry is very different in taste rather than common aloo ki sabji. Ingredients
- Potatoes (Aloo) – 4 (Big)
- Tomato – 1 (Big, roughly chopped)
- Green chilies – 7 (Slit)
- Turmeric powder – 1 teaspoon
- Coriander powder – 2 & 1/2 tablespoons
- Red chili powder – 1/2 tablespoon
- Kashmiri red chili powder – 1 teaspoon
- Ginger paste – 1 teaspoon
- Chat masala – 1 & 1/3 teaspoons
- Clarified butter – 2 tablespoons
- salt to taste
Phoran
- Cumin seeds – 1 teaspoon
Instructions
- Boil the potatoes and peel them. After peel them roughly mashed with hands and keep in side.
- Heat ghee in a pan over medium heat. Add phoran (cumin seeds) and let them splutter.
- Add the chopped tomato and cook for 2 minutes. Add dry spices (turmeric, coriander, red chili powder, and salt), mix it well.
- After 5 minutes add chat masala powder, kashmiri red chili powder and green chili and cook until oil separates from the sides.
- Add roughly mashed potatoes and cook for 5 minutes. Add 3 cups water and boil the Bhandare wale aloo ki sabji till it thickens a bit.
- Turn off the heat and add the chopped coriander leaves. In another pan heat 1 tablespoon ghee, add this tempering to the cooked bhandare wale aloo ki sabji. Leave it for 5 minutes.
- After 5 minutes serve with puri, rice, roti, sooji ki roti and paratha.
