Ingredients
- Chicken – 1 kg (cut into pieces)
For Marination
- Curd – 100 grams
- Dry red chilies – 2
- Garlic paste – 1 tablespoon
- Fresh fenugreek leaves (methi) – 2 cup
- Black Salt – 1/2 tablespoon
For Curry
- Onion – 3 (Sliced)
- Garlic paste – 1 teaspoon
- Onion paste – 1 (small)
- Green chilies – 3 (slit)
- Chopped ginger – 1 & 1/2 tablespoons
- Coriander powder – 1 & 1/2 tablespoons
- Turmeric powder – 1 teaspoon
- Kashmiri red chili powder – 1/2 tablespoon
- Black pepper powder – 1/2 tablespoon or as per your taste
- Salt to taste
Phoran
- Green chilies – 6 (chopped)
- Green cardamom – 2
- Black cardamom – 1
- Cinnamon Stick – 1/2 inch
- Fresh fenugreek leaves (methi) – 2 tablespoons
- Oil – 2 tablespoons
Method
Preparation:
- In a mixing bowl, combine the chicken, curd, garlic paste, fenugreek leaves, and black salt. Mix everything thoroughly until well combined, then set it aside for later use.
- Next, heat oil in a pan and add ginger, green chili, fenugreek leaves, and garam masala. Allow them to crackle in the hot oil, releasing their aromatic flavors.
- Then, introduce chopped onions to the pan and sauté them until they turn golden brown. Afterward, add the garlic paste, turmeric powder, coriander powder, black pepper powder, and salt. Sauté this flavourful mixture for 5 minutes, allowing the flavors to meld together and the spices to cook through.
- Once the spice mixture is ready, add the chicken mixture to the pan and fry until the pieces turn white and become coated with the masala. Cover the pan and cook over low heat until the chicken is tender and thoroughly cooked, remembering to stir occasionally.
