Ingredients:
- Noni leaves – 1/2 kg washed
- Mustard oil – 1 tablespoon
- Salt to taste
For 1st Tempering (Tadka)
- Mustard oil – 1 tablespoon
- Chopped garlic – 1 tablespoon
- Dry red chilies – 1
Instructions:
- To start, trim and discard the edges from the bottom stems of noni saag, ensuring to use the rest of the stems and leaves as they are very healthy and edible.
- After washing the noni saag with enough water, keep it aside.
- Next, heat mustard oil in a pan. Then, add the noni leaves and mix well, allowing them to cook for 8-10 minutes on low heat. Gradually, add salt to taste and stir until the saag is well-cooked. Once the noni saag is tender, continue cooking on full flame, leaving it uncovered until the water is completely absorbed.
- Meanwhile, in another pan, heat mustard oil and add chopped garlic and whole red chili. Allow them to splutter, releasing their flavors.
- Afterward, pour the prepared tempering onto the saag, ensuring to mix everything well. It’s essential to turn off the flame at this point. Make sure there are no liquids remaining in the kadai once the noni saag is cooked thoroughly.
- Lastly, serve the hot noni saag with roti or rice for a delicious and nutritious meal.
