Ingredients:
- Semolina (sooji/rava) – 1 cup
- Oil – 2 tablespoons
- Mustard seeds – 1 teaspoon
- Ginger – 1 teaspoon (finely cursed)
- Green chilies – -3 Slit (adjust to taste)
- Curry leaves – 2 sprigs
- Lemon juice – 1 tablespoon
- Onions – 1/2 cup finely sliced
- Peanuts – 1 & 1/2 tablespoons
- Mixed vegetables (carrots & beans) – 2 tablespoons
- Corn – 1 tablespoon
- coriander stems – 1 tablespoon
- Green bell peppers (capsicum) – 1 tablespoon
- Water – 2 cups
- Salt to taste
- Freshly chopped coriander leaves for garnish
Instructions:
Dry Roast the Semolina & Peanuts:
- Heat a pan over medium heat.
- Add the semolina to the pan and dry roast it while continuously stirring. Roast until the semolina turns light brown. This should take about 5-7 minutes. Transfer the roasted semolina to a plate and set it aside.
- In the same pan add 1/4th teaspoon oil, add peanuts and cook peanuts in preheated oil until fragrant and hot, about 2 minutes. Transfer to paper-towel lined plates to drain.
Prepare the Seasoning:
- In the same pan, add the oil and heat it.
- Add the mustard seeds and some curry leaves let them splutter.
Add Vegetables and Onions:
- Add sliced chopped onions and sauté them for 2-3 minutes until the onions become translucent. Now add the carrots & beans for around 5 minutes until the raw smell goes away and start to soften.
- Add corn and mix well. After 2 mins add coriander stem, curry leaves, turmeric powder and ginger and mix well.
Cook the Semolina:
- Pour in the 2 cups of water and bring it to a boil.
- Reduce the heat to low and slowly add the roasted semolina, stirring continuously to avoid lumps. Now add capsicum, salt and slit green chilies and mix well
- Cook the mixture on low heat for 4-5 minutes, stirring constantly, until it thickens and the semolina absorbs the water. Now add peanuts and mix well.
Garnish and Serve:
- Garnish the Sooji Upma with freshly chopped coriander leaves.
- If desired, squeeze some lemon juice over the upma for a tangy flavour.
- Serve hot.
