Egg Bhurji
Egg bhurji is an egg dish from India. This is a great breakfast recipe, and can be cooked in minutes.
Ingredients
- Egg – 5
- Onion – 2 (chopped) or sliced (it’s your choice)
- Green chilli – 5 (chopped)or as per taste
- Tomato – 2
- Red chilli powder – 1 tsp (teaspoon)
- Salt to taste
- White oil – 4 tbsp (tablespoon) or mustard oil
Method
- Crack the eggs into a mixing bowl with a pinch of salt.Beat well with a fork or wire whisk.
- Add red chilli powder, onion, green chilli and tomato and mix well.
- Put a small frying pan on a low heat and let it get hot.
- Add 4 tbsp white oil.
- Pour on the egg mixture, keep stirring the mixture continuously until you begin to see the eggs coming together and forming a crumbly texture.
6. Continue to stir until the egg is cooked well.
7. Remove from pan.
8. Transfer the egg bhurji to the bowl.
9. Serve hot with chapatti or Paratha.

Notes
You can add small boiled potatoes cubes or peas, carrots, capsicum and other vegetables to experiment with taste and improve the nutrition values.
