Ingredients
- Carrot – 1/4th cup (cut, thick sliced)
- Peas – 1/4th cup
- Potato – 2 (cut, thick sliced, small)
- Onion – 1 and 1/2 (cut, thick sliced, small)
- Green chilies – 4
- Ginger-Garlic paste – 1 tablespoon
- Turmeric powder – 1/4th teaspoon
- Red chili powder – 1/2 teaspoon
- Coriander powder – 1/2 teaspoon
- Tomato – 3/4th
- Mustard oil – 2 tablespoons
- Salt to taste
- Panch phoran – 1/4th teaspoon (Panch phoran)
Methods
- Wash and chop all the vegetables according to the specified measurements. Now, heat oil in a pan, add panch phoran and let them splutter.
- Next, introduce potatoes, carrots, salt, and onions to the pan, stir-frying for 3-4 minutes until they begin to soften. Add peas and green chilies, mixing well for a burst of color and flavor.
- Now, elevate the dish by seasoning the vegetables with ginger-garlic paste, turmeric powder, coriander powder, and red chili powder. Ensure an even coating of the aromatic spice blend by thorough mixing.
- After 3-4 minutes, add tomatoes and cook for an additional 2 minutes, allowing them to soften slightly and the oil to separate. At this stage, pour in hot water and mix thoroughly, allowing the flavors to meld and the vegetables to absorb the delicious spiced broth.
- Reduce the heat to low, cover the pan, and let the spiced mixed vegetable curry simmer gently. Allow the curry to simmer for an additional 10-15 minutes, ensuring the vegetables are thoroughly cooked and infused with the aromatic spices.
- Uncover the pan and, as a finishing touch, sprinkle fresh coriander leaves over the curry. This adds a burst of freshness and a visual delight to the dish.
- Your spiced mixed vegetable curry is now ready to be served. Enjoy this flavourful creation with rice, naan, or your preferred choice of accompaniment.
