Ingredients
- Chicken – 500g
- Mustard oil – 2 tablespoons
- Onion – 2 (finely sliced)
- Ginger – 1/2 tablespoon
- Garlic paste – 1/2 tablespoon
- Turmeric powder – 1 teaspoon
- Kashmiri red chili powder – 1 teaspoon
- Green chilie paste – 1 tablespoon or as per you taste
- Salt to taste
For Tempering (Phoran)
- Clarified butter (Ghee) – 1/2 teaspoon
- Dry red chilies – 2
- Green Cardamoms – 2 no.
- Black Cardamoms – 1 no.
- Cinnamon stick – 1/2 inch
- Cloves – 4 no.
- Bay leaf – 1 no.
- Cumin seeds – 1/2 teaspoon
For Garnishing
- Fresh coriander leaves for garnish
Method
- In a bowl add clean and washed chicken, salt, ginger-garlic powder, kashmiri red chili powder, turmeric powder, green chili paste, onion and mustard oil. Mix properly and keep aside for 20 minutes.
- Heat clarified butter (ghee) in a kadai or pan over medium heat. Add all the whole spices (dry red chilies, black cardamom, green cardamom, cinnamon stick, cloves, cumin seeds and bay leaf) and let them crackle.
- Once it splutters, add the marinated chicken pieces and coat them evenly with the phoran & cook on high heat for 5 minutes. Now cook on slow heat for 20-25 minutes or until the chicken is cooked through. No need to add additional water; it cooks in its own juices.
- Garnish with fresh coriander leaves and serve with paratha, roti and fried rice.
