Jack fruit is commonly used in South Asian and South-East Asian cuisine. Jack fruit is the national fruit of Bangladesh and it is also the State fruit of the Indian state of Kerala.

The cuisine of India, Nepal, Bangladesh, Sri Lanka, Indonesia, Cambodia, Thailand and Vietnam use cooked young Jack fruit. In Indonesia young Jack fruit is cooked with coconut milk as gudeg. In northern Thailand, the boiled young jack fruit is used in Thai salad  called tam kanun.

In West Bengal the unripe green Jack fruit called ichor is used as vegetable to make various spicy curries, side dishes an as filling for cutlets & chops. It is especially sought after by vegetarian who substitute this for meat.

Ingredients

Method

First remove the skin of Jack fruit. Cut into small pieces.Wash thoroughly

Heat Jack fruit, 1/2 tsp oil, salt and water, in a pressure cooker. Pressure cook upto 2 whistle.

Boiled Jack fruit

Remove Jack fruit from water and mash with boiled potato, add gram flour, green chilli, onion, garlic paste, turmeric powder, red chillies powder, coriander leaves and salt. Mix well.

Mashed Jack fruit

Prepare small balls of equal portions of this mix and flatten each ball into a circle.

Add 4-5 tbsp oil in a frying pan on medium flame.

 

Fry on both sides until golden brown.

Serve with green chutney and sliced onion.

  • Green chillies- 4 chopped
  • Onion- 1 small sized chopped
  • Fresh garlic paste- 1 tbsp
  • Turmeric powder- 1/2 tsp
  • Red chillies powder- 1/4 tsp
  • Fresh coriander leaves- 1 tbsp
  • hot oil - 1 tbsp
  • Oil for frying
  • Salt to taste
