Kheer| Rice Kheer|, also known as Indian Rice Pudding, is essentially the Indian rendition of the classic rice pudding, crafted from three fundamental ingredients: rice, milk, and sugar. This dessert is predominantly milk-based and varies in preparation across different regions, bearing names like payasam, payesh, and firni in various parts of India. Traditionally crafted with aromatic and flavorful elements, homemade kheer holds a significant place in religious festivities, celebrations, and auspicious occasions.

Ingredient
- Rice – 1 tablespoon
- Milk – 3 cups
- Sugar – 1 and 1/2 tablespoon or as per your taste
- Raisins – 20 nos. (Chopped)
- Cashew nuts – 3 nos.
- Almonds – 8 nos.
- Green cardamom powder – 1/2 teaspoon
Instructions
- Firstly, wash the rice and soak for 30 minutes and then drain the water.
- Keep the pan on a low to medium-low heat. Pour milk and bring to a boil. Chopped all nuts.
- Add the drained rice and nuts to the boiling milk and stir well. Simmer the mixture on low heat. Slow cook the rice until it becomes soft and the mixture thickens. This can take about 30 to 40 minutes.
- Add the sugar and cardamom powder and mix well. Continue to cook for another 5 to 10 minutes until the sugar dissolves completely.
- Switch off the gas flame. Let it cool for some time. You can serve it warm or chilled. Garnish with a few more chopped nuts and dry rose patels before serving.
