The humble lauki (Ghiya or dudhi , English: Bottlegourd) is very generous in terms of nutrition. High in fiber, low in calories and rich in vitamins and minerals.  So you decided to make a lauki dish ( lauki ki sabji perhaps?) . As a first step, you peel the lauki and then throw the peels away? Right?  Hold on a minute..

What if I told you that you could use those peels to make another tasty dish? Weird ! you will say. Stay with us for a few minutes and we will tell you how to use those peels for another delicious sabji, that could go as the second side dish. After all who doesn’t like two side dishes?

Lauki Ke Chilke ki Bhaji

This dish is particularly popular in Bihar, but eaten all over North India, and known by various names, but for the sake of creativity lets call it Lauki Chilka Delight.

The important part is to pick a lauki with unblemished clean skin for a perfect texture.

Lauki (Ghiya) Ke Chilke Ki Bhaji

Lauki Ke Chilke Ki Bhaji. Indian Curry made of Bottle gourd Peels. Lauki is also known as Ghiya, or Dudhi. A tasty preparation of unblemished skin of Lauki.

Ingredients

  • Peels of Lauki bottle gourd – 1 cups
  • Potato – 2 medium size
  • Dry red chilli – 2
  • Cumin seeds – 1 tsp
  • Turmeric powder – 1 tsp
  • Red chilli powder – ½ tsp
  • Garlic paste – ½ tbsp
  • Salt to taste
  • Mustard oil - 1 ½ tbsp or as required

Instructions

  • Wash and thik peel off of the Lauki (Lauki ka chilka) and cut into ½ inch pieces.
  • Wash and Peel off of the potato and slice the potatoes lengthwise, into ½ inch pieces.
  • In a pan add the oil and turn the heat to medium.
  • Add cumin seeds and let them crackle, turn the heat to low.
  • Now, immediately add the potatoes, cook them on medium heat for five minutes.
  • When potatoes are half cooked add Lauki ka chilka and sauté.
  • Add salt, red chili powder, turmeric powder, garlic paste and salt.
  • With a spatula, gently move the potatoes and Lauki Ke Chilke around in the pan for 5 minutes, so they are all evenly coated with oil and all spices.
  • Cover with a lid and let the cook in their own steam for 20-25 minutes.
  • Continue until potatoes and Lauki Ke Chilke gets fully cooked. Turn Off the flame.
  • Our Very own Lauki Chilka Delight is ready.

Notes

Serving
Serve with chapatti , Puri and parathas and also serve with Chawla dal.
