Ingredients
- Vermicelli (sevai) – 1 cup
- Oil – 3 tablespoons
- Green chilies – -3 Slit (adjust to taste)
- Curry leaves – 2 sprigs
- Lemon juice – 1 tablespoon
- Onions – 1/2 cup finely sliced
- Peanuts – 1 & 1/2 tablespoons
- Turmeric powder – 1/4th teaspoon
- Mixed vegetables (carrots, corn & beans) – 1/2 cup
- Coriander stems – 1 tablespoon
- Cashew nuts – 1 tablespoon
- Green bell peppers (capsicum) – 1 tablespoon
- Water – 1 cups
- Salt to taste
- Freshly chopped coriander leaves for garnish
Method
- Heat a pan over medium heat.
- Add the vermicelli to the pan and dry roast it while continuously stirring. Roast until the vermicelli turns light brown. This should take about 5-7 minutes. Transfer the roasted vermicelli to a plate and set it aside.
- In the same pan add 1/4th teaspoon oil, add peanuts, cashew nuts and cook peanuts in preheated oil until fragrant and hot, about 2 minutes. Transfer to paper-towel lined plates to drain.
- In the same pan, add the oil and heat it. Add curry leaves and Stir for a minute.
- Add sliced onions and sauté them for 2-3 minutes until the onions become translucent. Now add the carrots & beans for around 5 minutes until the raw smell goes away and start to soften.
- Sprinkle turmeric powder, salt and cashew nuts. Mix well. Pour in the 1 cup of water and bring it to a boil. Reduce the heat to low.
- Add the cooked vermicelli to the pan and gently toss to combine with the spices and vegetables. Cook the mixture on low heat for 4-5 minutes, stirring constantly, until it thickens and the vermicelli absorbs the water. Now add capsicum & peanuts and mix well.
- Drizzle lemon juice over the sevai upma and mix thoroughly.
- Garnish with fresh coriander leaves.
