Ingredients
- Chicken (roughly minced) – 250g
- White pepper – 1/2 teaspoon
- Vegetable oil – 2 tablespoons
- Garlic – 3 cloves
- Birds’ eye chillies – 4
- Mild red chillies, (sliced) – 2 large
- Fresh basil leaves – 1 cup
- Oyster sauce – 1 tablespoon
- Fish sauce – 1/2 teaspoon (optional)
- Sugar – 1 teaspoon
Method
- Use a mortar and pestle to pound the garlic and chillies to a rough paste.
- Heat the vegetable oil in a wok or pan over medium-high heat.
- Add the minced garlic and red chili to the pan. Stir-fry for about 1 minute until fragrant.
- Add the chicken minced to the skillet. Cook until browned and cooked through.
- Toss in the sliced red chilies. Stir-fry for another 2-3 minutes.
- In a small bowl, mix together the oyster sauce, fish sauce (if using), white pepper and sugar.
- Pour the sauce mixture over the stir-fry in the pan. Stir well to coat all ingredients evenly.
- Turn off the heat and add the fresh basil leaves to the pan. Gently toss until the basil is wilted.
- Serve the Thai basil chicken stir-fry hot over cooked rice.
